Calamares

Calamares is the Filipino version of the Mediterranean breaded fried squid dish, Calamari. There are different methods on how to make this dish; the most usual does not involve breadcrumbs. However, I chose to add breadcrumbs for this recipe for visual appeal and a crunchier texture.

Recipe: Calamares

Ingredients

1/2 lb medium to large sized squid, cleaned and sliced into rings

3/4 cup all-purpose flour

1 piece raw egg, beaten

3/4 cup breadcrumbs

1 teaspoon salt

1/2 teaspoon ground black pepper

2 cups cooking oil

Cooking Procedure

Combine squid, salt, and ground black pepper then mix well. Let stand for 10 minutes.

Heat a cooking pot the pour-in cooking oil.

Dredge the squid in flour then dip in beaten egg and roll over breadcrumbs.

When the oil is hot enough, deep-fry the squid until the color of the coating turns brown. Note: This should only take about 2 to 3 minutes in medium heat. Do not overcook the squid.

Remove the fried squid from the cooking pot and transfer in a plate lined with paper towels.

Serve with sinamak or Asian dipping sauce.

Dinuguan Recipe


Dinuguan is a dish that is mainly comprised of pork meat (and most often pork innards such as small and large intestines) and pork blood. This is also known as “Blood Stew” or Pork Blood Stew. Even though some Southeast Asian and European countries have their own pork blood dishes, Dinuguan is considered unique due to the use vinegar and long green pepper.

Dinuguan Recipe


Ingredients

1 lb pork loin, cut into cubes

1 cup vinegar

2 pcs long green pepper

1 1/2 tbsp brown sugar

1 medium sized onion, chopped finely

1 tbsp garlic, minced

1 tbsp cooking oil

1 cup water

10 oz pork blood

Cooking Procedure

Sauté the garlic and onion in a pan

Add the pork and sauté for about 5 mins

If you like it to be more tasty, you may add 1 pork or beef cube followed by a cup or two of water.

Simmer until the water is almost gone to tenderize the meat

Add the pork blood and mix well. Let this simmer for 10 minutes

Add the vinegar. Simmer for 15 minutes.

Put the brown sugar in followed by the long green pepper and simmer for 2 minutes

Serve hot

Lumpiang Sariwa or Fresh Spring Roll is a vegetable dish composed of different vegetables with a soft (unfried) wrapper garnished with sweet sauce and crushed peanuts. Some popular variations of this dish are lumpiang ubod (made with heart of palm) and lumpiang hubad (Unwrapped lumpiang sariwa).

Ingredients:

Filling

2 cups sweet potato, cubed

2 tbsp fish sauce (patis)

1 lb cabbage, shredded

1 ½ cup carrots, julienned

½ cup water

½ cup peanuts, crushed

6 pieces Lettuce leaves

½ lb pork, thinly sliced

1 pack extra firm tofu, sliced in strips

1 cup shrimp, shelled and deveined

2 cups string beans (baguio beans), chopped

1 medium sized onions, chopped

½ cup cilantro, chopped

3 tbsp garlic, minced

1 pork cube

Wrapper

1 cup all-purpose flour

2 pieces raw eggs

2 tbsp cooking oil

½ tsp salt

1½ cups milk

Sauce

1 tbsp soy sauce

½ cup brown sugar

2 cups water

½ pork cube

1 tbsp garlic, minced

2 tbsp corn starch (diluted in 4 tbsp water)

Cooking Procedure:

1. Cook the Filling

1.1. In a heated pan, pour-in the cooking oil then sauté the garlic and onions
1.2. Add the pork and cook until color turns light brown
1.3. Put-in the pork cube and add ½ cup water then simmer until pork is tender
1.4. Add the shrimps and sweet potatoes and cook for 5 minutes or until potatoes are soft
1.5. Add the tofu and cook for a few minutes
1.6. Put-in the cilantro, carrots, and string beans then mix with the other ingredients
1.7. Add the cabbage and let cook for 5 minutes
1.8. Add the fish sauce and mix. Set aside

2. Make the wrapper

2.1. In a mixing bowl, crack the eggs and beat
2.2. Add the milk while beating
2.3. Put in the salt and all-purpose flour then mix thoroughly
2.4. Add the vegetable oil and mix well
2.5. Turn the stove on to medium heat and put the non-stick pan in place
2.6. Spray the pan with oil or grease with butter
2.7. Pour-in the wrapper mixture (about half a cup) and tilt the pan to distribute the liquid evenly
2.8. Cook until the top part of the mixture is dry (about 2 minutes)
2.9. Using a spatula, remove the cooked mixture and place in a flat plate. Set aside

3. Make the sauce

3.1. In a saucepan, pour the water and bring to a boil
3.2. Add the brown sugar and pork cubes
3.3. Put some salt and soy sauce then mix well
3.4. Dilute the cornstarch in water and pour in the saucepan.
3.5. Cook until the sauce becomes thick. Set aside.

4. Wrap the filling

4.1. Place the wrapper in a plate then place a lettuce leaf in the middle top part of the wrapper.
4.2. Spoon the filling and place in the middle of the wrapper (over the lettuce leaf)
4.3. Close the wrapper by folding the lower part first then roll the sides until the filling is sealed

5. Pour the sauce over the Lumpiang Sariwa and garnish with crushed peanuts and minced garlic.

Leche Flan (also known as crème caramel and caramel custard) is a dessert made-up of eggs and milk with a soft caramel on top. This dessert is known throughout the world (especially in Europe) and has been in the dessert menu of most restaurants because of its convenience in preparation and long shelf life. In the Philippines, Leche Flan is the top dessert of all time. During celebrations such as parties and town fiestas, the dining table won’t be complete without it.

Ingredients:

10 pieces raw eggs

1 small can condensed milk

1 cup fresh milk (or evaporated milk)

1 cup granulated sugar

1 tsp vanilla extract

Cooking procedure:

1. Using all the eggs, separate the yolk from the egg white (only egg yolks will be used).

2. Place the egg yolks in a big bowl then beat them using a fork or an egg beater

3. Add the condensed milk and mix thoroughly

4. Pour-in the fresh milk and mix well

5. Put the mold (llanera) on top of the stove and heat using low fire

6. Put-in the granulated sugar on the mold and mix thoroughly until the solid sugar turns into liquid (caramel) having a light brown color

7. Spread the caramel (liquid sugar) evenly on the flat side of the mold

8. Wait for 5 minutes then pour the egg yolk and milk mixture on the mold

9. Cover the top of the mold using an Aluminum foil

10. Steam the mold with egg and milk mixture for 30 to 35 minutes.

11. After steaming, let the temperature cool down then refrigerate
